Paneer Kheer is a kheer made with paneer. I am naming this also as crumbled basundi for its texture and taste. The recipe makes about 2 small cups of the kheer. The beauty of this dish is the satisfaction you get even when you eat a small cup.. So delicious and so soothing.. Adjust the sugar to taste and make sure you use fresh paneer.. Ingredients
Paneer (Crumbled) – ½ cup
Nutmeg Powder – A pinch
Cardamom Powder – A pinch
Saffron – 4 – 5 strands
Corn Flour – 2 tea spoons
Milk – 2 cups
Sugar – 4 table spoons
Charoli – 10 (for garnish)
Method
Crush the saffron in a teaspoon of milk and keep aside. Add corn flour in a teaspoon of milk, mix well without lumps and keep aside.
Boil milk, add the corn flour milk mixture mix well continuously and then simmer for 10mins until it starts thickening. Add sugar and mix well until completely dissolved. Add the saffron milk mixture and give a quick mix.
Now add the crumbled paneer to the boiling milk, mix well and allow it to boil for 5-7 more mins.
Add cardamom powder, nutmeg powder, mix well and garnish with nuts and switch off.You can also toast the nuts in ghee and then add it to the kheer.
Allow it to cool for 15 mins then refrigerate for 4 hours and serve chilled
