Pizza is one of the most famous food in the world. It is originally from Italy. Pan Pizza is a thick crust pizza which is very tender and soft on the inside and crispy fried on the bottom. This is a quick one and can be done in less than 90 minutes from start to finish. The toppings are a personal choice and based on availability. I got this from a cooking show and was fabulous.. Do not put too many toppings on one pizza, it will not taste good and no one flavor will be enhanced. Limit to 5 or 6 toppings maximum. Toppings can be onions, bell pepper, garlic, ginger, coriander leaves, sun dried tomatoes, mushrooms, pineapple, olives, capers etc. and cheese. Mozzarella is the best choice for this.
A collection of recipes that are tried in my kitchen.. All of them are vegetarian (eggless) and some are vegan recipes!!!

Eggless Bienenstich Kuchen (German Bee Sting Cake)
For this month's We Knead to Bake, Aparna chose this German Bread (actually a German Cake).. It is an interesting cake with yeast used as the rising agent.. This has 3 texture, the top layer is little hard from the caramel, the cake is soft and the custard filling is smooth and silky.. This made 8 big pieces. The frosting was left over. So next time, I would do half the below frosting for this recipe..

Broccoli Cheese Paratha or Calciumaratha
Women are advised to eat calcium rich foods. This advise is more when you are a new mom. So when I was advised about having calcium rich in my diet.. I took the advise from my folks at home and also turned to internet to see what ingredients are rich in calcium.. And then I put these ingredients together and made this paratha.. So I named it Calciumaratha.. The two main ingredients are Broccoli and Cheese.. Makes 12 medium big sized parathas. Good for 3 – 4 people.

Sugar Free Chocolate Cake (w sugar substitute)
Sugar free chocolate cake is a recipe for vegetarians who do not eat sugar either due to weight restrictions or due to health restrictions like diabetes. This tastes great and is healthy compared to the regular cake. Substitute milk with cold water, butter with vegetable oil or margarine for Vegans.

Decadent Chocolate Fix / Healthy Chocolate Pudding
Lot of us have this opinion that a dish that looks healthy is not tasty and a dish that looks tasty is not healthy.. Whenever I serve a dish and oats is seen, people in my house assume that is not going to taste great and yes I have to mask the healthy ingredients quite a bit.. But with this delicious chocolaty pudding, all I had to do was keep it on the table and it was gone!!! Where did I get this recipe from??? I got this from a Doctor show.. They were talking about how difficult it is to eat healthy ingredients and how to make them tasty and quick. This delicious pudding has all the great ingredients (from their site – “With over 20 vitamins, minerals and antioxidants, avocado keeps you looking and feeling great, while pure cocoa gives your brain a rush of dopamine to fire up your brain’s pleasure receptors”and can be made in a jiffy..

Makkai Palak / Corn and Palak gravy
Spinach is a very healthy leafy vegetable.. Most of us know that and that is the first food that comes to mind when discussing healthy stuff.. I love (and sincerely try) to include Spinach in our diet at least once a week. Twice a week would be awesome. So when I was looking for recipes that can be had as a side for roti or pulao, I remembered this very pretty looking gravy. This looks so tempting and appealing with yellow corn kernels popping out in a green silky smooth palak gravy..

Creamed Corn
The creamed corn is a rich and delicious recipe I saw in one of my favorite cookery show by Alton Brown - Good Eats. It is very flavorful, quick and yet silky and delicious.. To make this less rich, substitute milk for cream. One can also use other herbs instead of Rosemary. One point to note is – just bruise the rosemary and NOT CHOP INTO PIECES. I learnt it the hard way. Also when removing the kernels from corn, knife should be facing towards the board or you will get corn milk facial. The recipe yields 3 cups of the creamed corn.
