Maambazham Mor Kuzhambu / Maambazham Pulicherry

Mangoes are delicious, they are called the King of Fruits is what I am teaching my little one now.. So true.. Mango when eaten raw or when eaten as a fruit is super yummy and delicious.. It is also very versatile. I have made few recipes with Mango and Manga (raw mango) and have loved each of it. It is Mango season now and I wanted to do a different recipe that I have not tried before and answer was the easy and quick authentic mor kuzhambu made with Mango. Loved this recipe for its taste, easy of making it, its authenticity and such a different one.. A delicious mor kuzhambu made with mangoes. This mor kuzhambu is also very quick one to do..

Mangai Saadam / Raw Mango Rice

Mango is the king of fruits and the raw variety called Raw Mango or Green Mango is used in a lot of cooking.. We used its powder as Amchur powder, we use the raw mango for pickles, rice, in sundal etc.. Mangai Rice is a very delicious and tangy South Indian variety rice. It is very appetizing in its appearance with its beautiful yellow color from turmeric. This is a quick recipe and taste best when served hot fresh, but also makes a great travel food. The best accompaniments for these variety rice dishes are Spicy potato fry, appalam, chips or vadam.

Mango Jam

Mango is the king of fruits is what I am teaching my daughter now... Generally we do not see Mango jam in stores many times.. I always imagined it was due to the cost of the mangoes.. We have a mango tree in our hometown and love to relish the mangoes.. But I am not a mango person.. I do not prefer anything made with Mangoes from Mango as is to Mango shake.. But the only exception is this delicious Jam.. Good thing about Mango jam, you get so much flavor and sweetness from the fruit that you can reduce the added sugar a lot..

Thayir Semiya Adai

Some recipes are very interesting and can imagine the end product when we are making it.. This one I got from a TV show – “Arusuvai Ithu Thani Suvai” from Jaya TV which is by a very famous Chef - Mrs. Revathy Shanmugam. This is my choice for this Blogging Marathon - Recipes from Celebrity cooks.

Kalyana Manga Urugai - Quick Manga Pickle(கல்யாண மாங்கா உருகாய்)

Kalyanam means marriage in Tamil and Manga is raw Mango and urugai is pickle.. That is how the name for this pickle has arrived.. It is a pickle which is served in Tamil marriages. Kalyana Manga Urugai is a pickle that is quick and easy to make. Normally pickles takes many days to process, but this one can be done in less than 15 minutes. Although it can be served immediately, it is best when it sits for a couple of hours to allow all the spices to soak well. This urugai is served in all South Indian Marriages. This is my choice for K - Regional

Vegan Mango Muffins w Hudson Oil

I try a lot of products to keep giving my family healthy and tasty foods.. Some products are well designed and make life so much easier. I got an email from Hudson to try out their Canola oil and was very happy to accept it. They sent me a liter of their oil in a very well packed case. I wanted to make a cake or a muffin and use this oil. When I first opened the main lid, I really liked the next spill proof lid that came along (see image below) and then when we pour the oil out, it is so much easier to not have to worry about spilling around the sides. Very efficient lid as regards to spill proof. I used this oil and made the Vegan Mango muffins and it was a very big hit among my family members. Delicious muffins and the house is filled with mango flavor and aroma. These muffins have very less fat and a lot of healthy stuff like whole wheat pastry flour, flax seed. However this does have quite a bit of sugar. You can reduce the sugar to 1/2 cup if desired. This sweetness was perfect for us. I got this recipe from here and I absolutely love it.

Mango Halwa (Microwave)

My blog views have crossed 50000 – yayyyyy!!!!!.. Celebrating and thanking you all for your support with a delicious mouthwatering sweet… Mango Halwa is a quick and easy sweet which can be done in less than 30 minutes.  You will get about 12 medium sized pieces. I got this recipe from here. The halwa tastes best when served warm. If it becomes little hard after keeping for a while, microwave for 15 seconds to bring it back to temperature and serve!
