Eggless Cornmeal Bread / Buttermilk Cornbread / Eggless Cornbread

Cornbread is a very popular breakfast in the US.. It is made on the skillet or baked in the oven and served as breakfast. It is quite simple to do and very delicious.. I baked this in a 8 inch square dish and the height of the bread was about 1 1/4 inches.. You will get a taller one if you choose a smaller pan. You can also bake these in muffin tins. I got this recipe from allrecipes.com and made a few changes..

South American Cachapas

Do we all love recipes that are too simple, but looks exceptional??? Yeah... I am all for it.. You guessed it right, Today's recipe which I got from here is a very simple and elegant breakfast which is super quick to do... With just a few readily available ingredients, today we will relish a delicious pancake called cachapas from Venezuela. They are traditionally eaten with Queso de Mano (hand made cheese – soft one like mozzarella), but I used the cheese that I got locally here.

Spinach Mini Quiche w easy Crust / Mini Quiche with Crust / Eggless Quiche / Eggless Mini Quiche

Quiche is one of the recipes that I have not tried due to high amount of eggs in it.. Today I am sharing a delicious Quiche which is completely egg free.. So was this easy to do?? Yes and No.. The reason was I did mini quiche in muffin tin which does not have a loose bottom.. So had to research quite a lot to ensure that the base does not crack and also comes out clean.. I used the base recipe from cooks.com and the filling was my own.. The crust was so beautifully flaky and soft which is an interesting texture...

Cranberry Corn Muffin–Eggless and Butterless

Today's recipe is a muffin which is not too sweet and has an interesting taste from the corn meal and also a tang from the cranberries. Do you like fresh cranberries??? I am not a big fan of it.. But I love them dried.. But I love fresh cherries and prefer it over the macerated ones.. I always have a pack or two of various dry fruits in my pantry. The original recipe here calls for fresh ones but I have used the dried ones. I have also substituted the egg in the original recipe with flax seed meal. Go ahead and use the fresh ones if you like them and also can find them else can use the dried ones like me...

Makki Di Roti / Corn Tortillas - Punjab

Coming to the beautiful state of Punjab. Punjab’s name is derived from “Panch / Punj” means five and “ab” means water. A land of 5 rivers. From wiki – “Punjab is one of the most fertile regions on earth. The region is ideal for wheat-growing. Rice, sugar cane, fruits and vegetables are also grown. Indian Punjab is called the "Granary of India" or "India's bread-basket". It produces 10.26% of India's cotton, 19.5% of India's wheat, and 11% of India's rice. The Fazilka and Ferozpur Districts are the largest producers of wheat and rice in the state. In worldwide terms, Indian Punjab produces 2% of the world's cotton, 2% of its wheat and 1% of its rice. People in the area of Lahore and Amritsar prefer stuffed parathas and dairy products which is well known in the area for the quality of its milk products. There are certain dishes which are exclusive to Punjab, such as sarson da saag and makki di roti. The main masala in a Punjabi dish consists of onion, garlic and ginger. Tandoori food is a Punjabi specialty. The largest cultivated crop is wheat. Other important crops are rice, cotton, sugarcane, pearl millet, maize, barley and fruit. Bombay Halwa / Karachi Halwa / Sogan Halwa / Corn Flour Halwa–Maharashtra

Welcome to state of Bollywood, Cricket, Fashion and all that shines!!! State of Maharashtra is one of the very popular and advanced state in the Country. From Wiki – “Maharashtra (/mɑːhəˈrɑːʃtrə/; [məharaːʂʈrə] ( listen))(Marathi: महाराष्ट्र), is a state in the western region of India. It is the second most populous state after Uttar Pradesh and third largest state by area in India. Maharashtra is the wealthiest state in India, contributing 15% of the country's industrial output and 13.3% of its GDP (2006–2007 figures).  Mumbai, the capital city of the state, is India's largest city and the financial capital of the nation. Maharashtra is the world's second most populous first-level administrative country sub-division”. Coming to today’s recipe, it is very famous halwa that is a quick and tasty sweet which tastes best when served warm. This can be done in less than 15 minutes from start to finish. Most of the cooking is done in microwave here. This halwa is also called as Sogan Halwa, Corn Flour Halwa, Karachi Halwa.. This halwa does not have a very long shelf, so please use it up in a few days. I got this recipe from here

Here is one… When Valli announced that “Cooking with corn” as one of the themes, this immediately came to my mind as I have been wanting to try this for ever.. Not sure why I postponed for such a long time… Anyways this is going to be regular from now on..

Cornmeal Kozhukattai

A, B and now is C for which I chose to do this very interesting and very flavorful kozhukkattai.. Generally kozhukattai is made with rice flour and for a change I tried this different variety from here and it was so yummy!!! Loved this color and taste was perfect. I made the balls little smaller than the marble size. This one can be done very quickly except for the "making the balls" part. This one can be served warm or on room temperature..  This makes perfect for travel or lunchbox.. This is C for International / Fusion Cooking...

Corn Bruschetta is a Mexican appetizer – a Mexican twist to the traditional Italian Appetizer. Although traditional Italian Bruschetta is easier to make, the corn bruschetta is a different dimension. I got this recipe from here.
