Wheat Germ and Molasses Bread–Eggless Bakes

Quick Breads - as their name says there are quickly made breads. They are so versatile and come in many tastes from sweet, savory, spicy etc. They can be enjoyed for tiffin, breakfast, makes perfect for travel and lunchbox. I got this recipe from here. Eggless Oat Brownie–w Whole Wheat Flour

Brownie - something I crave and love so much. It is a chocolate lover's paradise... I mostly enjoy the gooey brownie as is. I got this recipe from here. Almond and Tutti Frutti Quick Bread - with Whole Wheat Flour

It feels so great when we do a recipe with healthy ingredients and it tastes awesome and folks at home do not find out that it has lot of healthy ingredients in it.. I always have a hard time convincing folks to eat when I declare that it is made with millets or whole grains. Now when I sneak them in and they do not know and they like it, I am happy.. Slowly I declare (only if asked) that the healthy ingredients are in them... I first made this quick bread with all purpose flour and the post is here and then in a few days made it with whole wheat flour..

Lachha Paratha / Lachcha Paratha–Layered Crispy and Flaky Whole Wheat Paratha

Coming today is another variety of Indian Bread which is layered and is crispy and flaky. You can make this with all purpose flour also, today I made this with Whole Wheat Flour and loved the taste and texture. I served this with Mooli Masala. Make this for dinner and enjoy it with your favorite side dish..

Bolani / Aloo Paratha

Bolani is Afghani Flat bread which is very similar to our stuffed paratha. Bolani is typically fried or baked. Today I have used potatoes and peas for the filling. Fillings can be any vegetable or combination of vegetables as per choice. I have tried both tawa version and baked version.. Loved the tawa version better. Serve this hot with curd or flavored mint chutney.

Honey Whole Wheat Pizza

Pizza is one of my daughter’s favorite… Actually I also like it, but the truth is I prefer home made. I have tried Pizza with regular all purpose flour, with multigrain flour (recipe coming soon), with whole wheat flour. In this recipe I have included 1/4th of all purpose flour also. You could try doing it completely with whole wheat flour, but you will need to proof for longer time.. I will try this next time with complete whole wheat flour. This will make 3 9 inch thin crust pizzas or 2 13 inch thin crust pizzas. Toppings are again a personal choice. I made 3 different group of toppings. One with Basil and mozzarella. Second with Basil, Olives and Mozzarella. Third with Cherry tomatoes, Mozzarella and Basil. Also please do not use Parchment paper on the baking tray, instead grease the baking tray well.

Aloo Anardana Paratha - Jammu and Kashmir

Jammu and Kashmir is the Northern most state in India. It consists of three regions – Jammu, Kashmir and Ladakh. Srinagar is the Summer capital and Jammu is the Winter capital. Jammu has numerous Hindu shrines which is big Hindu Pilgrimage bringing thousands of pilgrims every year. Kashmir is so beautiful and scenic and many movies of 1970’s and 1980’s time have captured the beauty for a lot of the romantic songs.. Ladakh is known for its remote mountainous picture perfect scenery and Buddhist Culture.. Coming to the cuisine of Jammu and Kashmir, Kashmir cuisine was mostly influenced originally by the Kashmiri Pandits. Usually Pandits do not eat meat, but this region is an exception where the Pandits have eaten all the meat except Beef which is banned here. So with a cuisine which has so much of meat based dishes, it was little challenge for me to land on an authentic dish from this region. I was so excited when my research landed me on Sanjeev Kapoor’s website and this was a dish mentioned for this region and was a sure try. A delicious spicy paratha which gets its flavor from the dried anardana seeds.. This recipe makes 12 - 14 parathas.. I served this with curd and it was such a delicious dinner. Now because this paratha is big, one could eat 2 or 3. I got this recipe inspired from here, but did few changes.

Gulgula / Gulgule –Chhattisgarh Cuisine

Today we travel to Central India to the State of Chhattisgarh. Chhattisgarh is a newly formed Indian state and was born on November 1st, 2000. Chhattisgarh is known as the rice bowl of India and has a rich varieties of rice and rice based dishes. A lot of the traditional foods are prepared with rice, rice flour, curd and green leafy vegetables. When coming to sweets, Gulgula is one of the popular sweets from this state. I got this recipe from here. A delicious sweet from the state of Chhattisgarh. This is so quick to make and also very delicious…

Pita Bread

Every country has their share of authentic breads. Pita bread is from the Mediterranean region and it tastes awesome when baked fresh with hummus.. You could enjoy it with hummus, insert it with falafel, tzazki sauce and salad and that makes a meal. Make these breads and are so perfect as a snack with hummus.. 100% Whole Wheat Sandwich Bread–Very soft Bread with sponge and soaker

 
In one line about this bread is - "One of the best breads I have baked"... Whenever I make whole wheat flour for breads, it is notorious for its dense and heavy texture.. But this bread will change all that... It was super soft, perfect texture and was delicious... I am sure I will baking this quite often.. Whenever I am visiting a bakery, I love to see the variety of stuff on display - just looks beautiful... But I am so attracted to the buns and rolls there.. Their aroma and flavor (if freshly made) is so wonderful... It almost takes one to a dream land.. And to replicate them at home is even more heavenly.. I got this recipe from here and we loved it.. Eggless Jam Swirled Muffins / Eggless Nutella Swirled Muffins

Want a breakfast or food on the go in a jiffy? I am sure a lot of us say yes.. These muffins are so perfect for it. A delicious and very pretty looking muffins was suggested by Priya for this month's Eggless Baking Group which is started by Gayathri. It was a quick and easy one and you get a lot of points for those swirls. Wanted to get the picture with the muffin opened (like the interior), but it was gone by then!!! The original recipe had eggs and I replaced them with Egg replacer and little extra baking soda

Dates and Walnut Cake

My blog views have crossed 100000... Yayy!!!! Thanks to all for your support and celebrating it with a delicious and healthy cake... Dates and Walnut Cake is a quick and healthier cake. The original recipe called for date palm jaggery. I used brown sugar and white sugar. If you can lay your hands on date palm jaggery, please use it. It is healthier option. Eggless Apple Walnut Bread–Very healthy Quick Bread

I get very excited to do dishes that are healthy. Generally sweet bakes have loads of butter, sugar and white flour in it. I try to make them healthy and tasty.. In my house people do not appreciate Oats much, but I try to tweak it and hide it in baked goodies and reveal the secret that the dish has oats after its gets the "Tasty and yummy" certificate... I guess lot of us to try to feed healthy stuff by hiding them in the dish... This bread was a very easy winner in getting the "Tasty and yummy" certificate and wins my "very healthy and easy" certificate and it is a win-win. A healthy quick bread which has no processed ingredients. I got this recipe from here. This stays well (when un cut) for at least 2 days in the fridge. I reheat it for 15 – 20 seconds in the microwave and serve them. It also makes a perfect lunchbox dish. It is a good idea to plastic wrap it if storing it in the fridge.

Spicy Green Peas Kachori

For me, to do an authentic recipe is so much thrilling and exciting and if the end results are good, then it is very satisfying. For this month’s SNC Challenge Sanoli challenged us to do this spicy kachori and dum aloo. SNC Challenge is a brain child of Divya and we have two exciting groups challenging each other with authentic recipes. Before coming to this month’s recipe, I also want to share with you about the award that I received for the last month SNC Challenge – Ghevar. Really excited to have won the “Well Presented Recipe”

Kachori is a spicy snack and this version of Green Peas Kachori is from West Bengal and is also called as “Koraishutir Kochuri“. This kachori is so delicious with a spicy filling and can be eaten as is or with curd. I served it with Dum Aloo (recipe coming soon). The original recipe had all purpose flour, I have made it with whole wheat flour. This recipe will make 6 kachoris. Stuffing can be a personal choice, make sure that the filling is not too wet or too oily.

Ingredients
For Dough
Whole Wheat Flour - 3/4 cup
Salt - 1/4 tea spoon
Oil - 1 1/2 tea spoons
Water - to make the dough
For the Filling
Green Peas - 1 cup
Green Chili - 2
Salt - 1/2 tea spoon
Ghee - 1 1/2 tea spoons (or oil for Vegan version)
Asafetida - A pinch
Ginger - 1/2 tea spoon (grated)
Roasted Cumin powder - 1/4 tea spoon
Sugar - 1/2 tea spoon
Oil - to fry
