Paneer Chettinad

Paneer is a type of cheese from milk. Paneer by itself has less flavor but has the capacity to absorb flavors well. This dish unlike most paneer dishes is done with both North Indian and South Indian spices. The flavors are very different and interesting. It goes very well with chapathi, roti, kulcha or pulao. I got this recipe from here.  The key in getting the best in this recipe is the fresh masala. This dish is not commonly found in restaurant menus, but this recipe is so flavorful and also simple – this one is a keeper.

Applesauce Corn Muffins

How about something which is very healthy and yummy delicious? A muffin which can be eaten guilt free is not something easily available everywhere, but it can be available in your houses with this great recipe. I got this recipe from here and thoroughly enjoyed it. I have used honey as the sweetener here, but for vegan version, please use agave nectar. You will need little more than 1/2 cup of agave nectar as it is less sweeter than honey..

Eggless Pistachio Tutti Frutti and Orange Biscotti

Biscotti is a twice baked biscuit. It is originally from Italy and is served with hot coffee. For Eggless Baking Group, when Gayathri chose this recipe, I was so excited as it looked so picture perfect and drool worthy. I did make a few changes from the original recipe by substituting eggs, substituting orange flower water. I actually looked for orange flower water but did not get here. I chose to use tutti frutti as I did not get dried apricots also..  It was fun making it and the whole house was filled with nice aroma and everybody in my house loved it. My daughter said – yummy!!! and my husband said that it was one of the best biscotti!!! I am so happy with this recipe..
