Quick Breads are a great way to bake goodies which do not take too much time and tastes awesome. I am really excited to share this quick bread for BM #21 with the theme of Cooking with Berries. This one is a healthy bread with no white flour and no white sugar and very less oil. If using dried cranberries, then use ¾ cup and also soak them in the orange juice used in the recipe for 20 minutes to soften. I got this recipe from here and this one is a winner!!!
Ingredients
Fresh / Frozen Cranberries (chopped) – 1 cup
Orange Juice – 1 ½ cups
Raisins (whole or chopped) – ½ cup
Honey – ¼ cup
Oil – ¼ cup
Whole Wheat Pastry Flour – 1 ½ cups
Whole Wheat Flour – ½ cup
Wheat Germ – ½ cup
Salt – ½ tea spoon
Sliced Almonds – ¾ cup
Baking Powder – 2 ½ tea spoons
Baking Soda – ½ tea spoon
Method
Grease a loaf pan and set aside
If using dried cranberries, soak them in the orange juice for 20 minutes and set aside
Heat a pan and add cranberries, orange juice, honey and raisins and bring it to a boil
Once it comes to a boil, add oil and remove to a wide pan to cool faster.
Preheat the oven to 375 degrees F (350 degrees F if using convection mode) Sift together whole wheat flour, whole wheat pastry flour, salt, baking soda and baking powder and mix well
Now add the wheat germ and mix well. Make a well add the liquid ingredients (after it cools to room temperature) and mix well until incorporated
Add the nuts and fold it until combined and add this all to the greased loaf pan
Smooth the top and tap the pan on the counter to release air pockets and bake it in the oven for 20 minutes
Reduce the temperature from 375 to 350 (350 to 335 if using convection mode) and bake for another 6 – 10 minutes until a toothpick inserted in the center comes clean. Mine took a total of 29 minutes (20 + 9)
Remove from the oven and keep it in the pan for 15 minutes and transfer to a wire rack and allow it to cool completely before slicing in.
