Milk Cake is a very tasty sweet made with just a few ingredients. I got this recipe from here and it was very tasty. With lot of festivals lined up, this is an interesting and new sweet to make. You do not need any special ingredient, most of it is in the pantry. Do not throw away the whey water. It has lot of health benefits. Add it to roti / chapathi while making dough.
Ingredients
Whole Milk – 6 cups
Lemon Juice – 3 table spoons (add very slowly)
Water – 6 table spoons
Sugar – ½ cup
Butter / Ghee – 1 tea spoon
Pistachio (Sliced) – 1 table spoon
Cardamom Powder – 1/8 tea spoon
Nutmeg Powder – 1/8 tea spoon (optional)
Edible Camphor – A pinch (optional)
Method
Boil milk in a microwave for 14 minutes (until it boils) or if using stove top, then bring milk to a boil on a heavy bottom pan in medium heat
Once the milk has boiled in the microwave, add it to a heavy bottom pan and stir
Mix lemon juice and water to dilute the lemon juice and set aside
When the milk is boiled for 2 minutes, add lemon juice very slowly. We only need to add lemon juice until the milk starts to curdle, so do not add all at once. The whey needs to separate very slowly and not immediately
Now keep this on boiling, stirring occasionally for 5 minutes, by now the whey would have been separated
Remove 2 cups of the whey water from the boiling milk. Use a strainer to catch the milk solids
Keep cooking the remaining mixture for another 25 minutes on medium heat stirring occasionally and also breaking any big chunks of the curd
Now the whey water would have all evaporated. If whey water is still there, cook for more time until the water is all absorbed
Add sugar and stir continuously for around 5 minutes
Add cardamom powder, nutmeg powder and edible camphor and stir for another 5 – 7 minutes until it comes together like a ball
Grease a plate with ghee and set aside
Transfer to a greased plate and form a square which is 1 inch in height
Garnish with pistachios by pressing the pistachio in a little to help it stick better
Allow it to rest for 1 hour and cut into desired shapes and serve.
Points to note about Whey (from Wikipedia) - Dairy whey remaining from home-made cheese making has many uses. It is a flour conditioner and can be substituted for milk in most baked good recipes that require milk (bread, pancakes, muffins, etc.). Whey is also good to add protein to breakfast smoothies
