Neapolitan is a tri color. Have seen the very famous Neapolitan ice creams and this cake also follows the same rule of tri color. We have 3 colors in this cake - green, pink and yellow. When Swathi chose this cake for the baking partners, I was very excited as I would get to do a very colorful cake. Made some changes from the original recipe. The original recipe was done in a loaf pan, I have made this in a 9 inch cake pan, made it Gelatin free and Eggless.
Ingredients
For the Cake
All Purpose Flour - 2 1/2 cups
Condensed Milk - 1 Can (14 oz.)
Sugar - 4 table spoons
Salt - 1/4 tea spoon
Baking Powder - 2 tea spoons
Baking Soda - 1 tea spoon
Agar Agar - 2 table spoons
Warm Water - 2 table spoons
Kinley Club Soda - 1 1/2 cups
Butter - 1 cup
Vanilla Essence - 2 tea spoons
Food Color - A few drops of green and red
For the Icing / frosting
Whipping Cream - 1 cup
Powdered Sugar - 3 table spoons
Vanilla - 1/2 tea spoon
For the decoration
Sugar - 2 table spoons
Water - 1/2 cup
Vanilla Essence - 1/2 tea spoon
Color Sprinkles - for decoration
Strawberry Crush - 2 table spoons
Method
Sieve together flour, baking powder, baking soda, salt and add sugar and mix well and divide the dry ingredients to 3 equal parts
Melt the butter and beat it well with condensed milk
Mix agar agar and water well and add it to the butter and condensed milk mixture
Add Vanilla Essence and beat well until all creamy and well incorporated and divide the liquid ingredients into 3 equal parts
Preheat the oven to 180 degrees C
Grease 3 9 inch pans with PAM and set aside
Add red food color to one of the three liquid ingredients and green food color to the second one. The third one is in natural color
Mix liquid ingredient 1 with dry ingredients 1 and fold it well incorporated and pour each mixture into a 9 inch pan and now keep all the three pans in the preheated oven
Bake for around 18 minutes or until a toothpick inserted in the center comes out clean.
If you have space to keep only one pan, then do not mix the other two before the oven is ready. Once the wet and dry are mixed, it should be in the oven as early as possible
I had space only for 2 pans, so did not mix the third wet and dry until the oven was ready
Once the cakes are out of the oven, allow them to rest in the pan for 5 minutes and run a knife around the corner and invert them on to the cooling rack and allow it to cool completely
Once to room temperature, keep in the fridge to set before icing
Mix agar agar with 1/4 cup cream and set aside. If it is not fully dissolved, lightly heat until it dissolves. To prepare icing, beat together 3/4 cup whipping cream, powdered sugar and the agar agar mixture well until peaks are formed
Allow the icing to rest for 10 minutes in the fridge
Mix together water, sugar and little vanilla and make a sugar water
To assemble the cake - put a table spoon of the icing on the cake plate and keep the first layer of cake. Keeping the icing makes sure that the cake sticks and does not move much while decorating
On the cake layer sprinkle sugar water and then add 1/4 cup of icing and spread well and add a table spoon of the crush
Keep the next layer and repeat the above 2 steps and the third layer
Now finish icing the cake and decorate with sprinkles
Cut a Slice and enjoy!!!!
Notes
Addition of Agar Agar in the cake makes it much more light, spongy and airy – read that it is a good substitute for Egg white
Addition of Agar Agar in the icing makes the icing smooth and soft and also set quicker. Here I am substituting it for Gelatin
You could also use the buttercream frosting or the ready made frosting
Do not use Amul Fresh Cream to whip as it does not form any peaks due to its very low fat content.
Make sure not to mix the wet and dry ingredients until you are ready to bake. Baking soda and baking powder when mixed with wet ingredients starts to react and if you delay in placing it in the oven, the cake will turn hard
I did not add much icing in between the layers as I wanted to highlight the three colors of the cake layers
