Couscous Upuma is a quick, healthy and tasty tiffin. I have fallen in love with this recipe that I love to include it as much as possible on my menu...
Ingredients
Onion (diced) – 1 cup
Cucumber (diced 1 inch) – ½ cup
Capsicum (diced 1 inch) – ½ cup
Coriander Leaves (chopped) – 1 table spoon
Curry Leaves – 6
Oil – 1 table spoon + 1 tea spoon
Mustard Seeds – ½ tea spoon
Cumin Seeds – ¼ tea spoon
Kadalai Parupu – 1 table spoon
Ulutham Parupu – 1 tea spoon
Cashew – 1 table spoon
Red Chili – 2
Salt – ¼ tea spoon + 1 ½ tea spoons
Asafetida – ¼ tea spoon
Green Chili (thinly sliced) – 3
Lemon Juice – 2 table spoons
Couscous – 2 cups
Water – 3 cups
Method
Mix couscous and ¼ tea spoon salt and set aside. Boil the water and add it to the couscous and mix well and cover it with a plastic wrap and set aside for 10 minutes.
After 10 minutes, fluff the couscous with a fork and make sure there are no lumps. Add 1 tea spoon oil and mix it with the couscous. Allow it to cool
Heat a pan and add 1 table spoon oil and once hot, add mustard seeds and cumin seeds, once they crackle, add cashew and sauté for 15 seconds, add kadalai parupu and sauté for 10 more seconds. Now add the ulutham parupu and sauté until all of them turn golden. Add red chili and asafetida
Add green chili, onion and curry leaves. Add salt and cook until the onions are well done. Add the capsicum and cook for 3 minutes. Add the cucumber and sauté for a minute. Now add the couscous and mix well and cook for another 2 more minutes. Add lemon juice and cook for a minute.
Remove from heat and garnish with coriander leaves and serve!!
