Muffin is a pastry which is very famous in United States. It is had as a breakfast with coffee or milk. Normally muffins are rich in taste and calories with lot of eggs and butter but this one is eggless and is lower in calories compared to the others. Do not over mix as the muffins will become rubbery. I got this one from a cooking show and loved it...
Ingredients
Whole wheat flour – 1 ½ cups
Wheat bran – ½ cup
Baking powder - 2 tea spoon
Cinnamon – 1 ½ tea spoon
Baking soda – ½ tea spoon
Salt – ¼ tea spoon
Nutmeg – 1/8 tea spoon
Ground Flax Seeds - 1 Table spoon dissolved in 3 Table spoon water (whisk in a small bowl and set aside)
Packed light brown sugar – ¾ cup
Ripe bananas - 3
Vanilla Extract – 1 tea spoon
Dark chocolate pieces/ dark chocolate chips or Carob chips (Chopped) – 1 cup
Method
Line muffin tins with parchment liners or spray with PAM and keep aside...
Preheat oven to 190 degrees C
Mash the bananas in a bowl, add the flax mixture, vanilla and oil if using.
Mix for 1 minute until combined.
Add the dry Ingredients and chocolate/carob and mix just until combined - Do not over mix as your muffins will be very tough, it is better to see some of the flour.
Fill liners to the top for large muffins/2/3 of the way for smaller ones.
Bake 18 minutes or until a toothpick slides right out clean.
