How many times I have admired the cake decorations in the bakery, pictures in magazines.. They look so appetizing and appealing that I would not want to cut the cake!! Such cakes are too beautiful to eat.. And the smooth icing made with chocolate is so smooth and shiny makes us drool.... Then I learnt this very simple frosting recipe and now this is what I recommend to everybody.. If you are not great at getting smooth icing, then this cake will be so ideal for you as the icing is very obedient and it listens a lot to you... This recipe will cover and frost one 9 inch round cake. I decorated my chocolate cake with this ganache frosting and we loved it.. It was picture perfect too…
Ingredients
Fresh Cream - 200 ml
White Chocolate Chips / Compound (finely chopped) - 400 grams
Method
Chop the white chocolate and place it in a medium sized bowl
Heat cream in another pan until it starts bubbling on the edges
Pour the cream over the chocolate and let it sit for 5 minutes (UNTOUCHED).
Do not stir it as you frosting or ganache may get grainy
After 5 minutes, slowly stir the cream and chocolate mixture until all the chocolate is melted and smooth
Cover the bowl with plastic wrap and allow it to cool.
Refrigerate for at least 30 minutes and now you have your ganache!!
Now this recipe is very forgiving.. If you forget to use the ganache in 30 minutes or if it became too hard, then reheat it in the microwave for 30 seconds and it will be ready for you..
Also the consistency of the frosting is dependent on you. If you need a much stiff frosting, then refrigerate longer.
To decorate the cake, allow it to cool completely and then pour the ganache in the center and slowly move it to edges and cover the entire cake. Now set this in the fridge for 30 minutes or longer until the ganache is set
To make it into icing decorations, allow it to be in the fridge for longer to get stiff consistency and now you can pipe the ganache

ReplyDeleteMy last post was also about ganache. However, instead of cooling it and spreading on the cake,I poured it over the cake as a glaze while the ganache was still warm. I also whipped up some of it after refrigerating to pipe a border around the cake. Ganache is really versatile as a frosting .I made mine with semi-sweet chocolate since I didn't want my cake to be too sweet.
