Rasam - the word is equal to home food!!! Love rasam and its flavor.. In our cuisine rasam is a daily food. And the best comfort food.. So there are many types of rasam and this one is with lemon flavor. I chose this for L - Regional Food
Ingredients
Lemon - 1
Lemon zest - from 1 lemon (optional - traditionally it is not used)
Tomato - 2 medium
Mustard Seeds - 1/2 tea spoon
Cumin Seeds - 1/2 tea spoon
Curry Leaves - 10
Coriander Leaves - 1 table spoon
Green Chili - 2
Red Chili - 1
Ginger pieces - 1 tea spoon
Water - 2 to 3 cups
Salt - 1 1/2 tea spoons
Tuvaram Parupu / Toor Dal - 1/4 cup
Turmeric Powder - 1/4 tea spoon + 1/2 tea spoon
Ghee - 1 tea spoon (can use oil also)
Method
Pressure cook the tuvaram parupu with 3/4 cup water and 1/4 tea spoon until well done. Generally it takes 3 - 4 whistles. Mash it well and set aside
Heat 2 cups water, cut tomatoes, green chili (slit), ginger pieces and curry leaves
Add 1//2 tea spoon turmeric and salt and bring it to boil
Add 1 more cup of water
Once the raw smell goes away, add the mashed dal and allow it cook for 3 to 4 minutes
Add coriander leaves
Heat ghee in a small pan and add mustard seeds, once it crackles, add cumin seeds, red chili and asafetida and immediately pour it over the hot rasam
Remove from heat and add the lemon zest and the lemon juice and keep it covered for 3 - 5 minutes. Serve hot!!!
