Bourbon Biscuits are a great treat for any chocolate lover.
Ingredients for the biscuit
All Purpose Flour – 1 cup
Salt – ¼ tea spoon
Baking Cocoa – 2 table spoon
Sugar – 1/3 cup + 1 tea spoon
Unsalted Butter (Softened) – 1/3 cup
Vanilla – ½ tea spoon
Flax Seed Powder – 1 table spoon
Water – 3 table spoons
Baking Powder – ½ tea spoon
Ingredients for the filling
Powdered Sugar – 1/3 cup
Unsalted Butter (Softened) – ¼ cup
Vanilla – ½ tea spoon
Baking Cocoa – 1 ½ tea spoons
Method Mix water and flax seed powder well and set aside
Sieve and mix together flour, salt, baking cocoa and baking powder and set aside
Beat the flax seed powder and water mixture until it becomes gooey and gel like
Beat ½ cup sugar and butter well and add vanilla and flax seed mixture and mix very well
Add this to the dry ingredients and mix together to get a dough and refrigerate the dough for at least 20 minutes.
Preheat the oven to 160 degrees C
Line a baking tray with parchment paper and set aside
Roll the dough to a 10 inch square. Use the help of flour if needed. But be careful to use very less flour
Cut into 2 1/2 inch by 1 inch pieces and arrange on the baking tray. With a fork, prick 3 or 4 times on each of the biscuit well. This will ensure that the biscuit does not puff up and remain flat and crisp. The fork marks should be deep and not shallow.
Sprinkle little sugar on the biscuits and keep it in the preheated oven for 20 minutes. Mine took exactly 20 minutes. Remove from the oven and allow it to cool for 5 minutes on the tray and then transfer them on to a cooling rack
Now to prepare the filling, sieve cocoa and powdered sugar to a mixing bowl and add the butter and vanilla and beat it until smooth and creamy
Once the biscuits are cooled down, spread the filling on a biscuit and sandwich it with another biscuit and refrigerate for the cream to be set.
