Litti Chokha

Some dishes are so new that I have not even heard their name.. One of such dish is Litti Chokha... When I saw the name announced by Nupur for this month's South vs North Challenge, I did not even know the name of this authentic dish from the state of Bihar.. I am so excited to be in the SNC group started by Divya where I learn so many authentic recipes... This will make 8 littis
For the Litti
Whole Wheat Flour - 2 cups
Ajwain / Carom Seeds - 1/2 tea spoon
Ghee - 2 table spoons + for serving
Baking Soda - 1/4 tea spoon
Salt - 1/2 tea spoon (adjust to taste)
Warm Water - 1 cup
For the Stuffing / Pitthi
Sattu / Besan - 1/2 cup
Grated Ginger - 1/2 tea spoon
Coriander Leaves - 1/4 cup (finely chopped)
Green chili - 2
Cumin Seeds - 1/2 tea spoon
Ajwain / Carom Seeds - 1/2 tea spoon
Mustard Oil - 1 table spoon
Pickle (sauce only) - 1 table spoon (I used the home made Mango Pickle)
Salt - 1/4 tea spoon (adjust to taste)
Black Salt - 1/4 tea spoon
Lemon Juice - 1 - 2 tea spoons

Potatoes - 3
Garlic Cloves - 5
Onion - 1 (finely chopped)
Tomato - 1
Green Chili - 2 (finely chopped)
Grated Ginger - 1 table spoon
Coriander Leaves - 3 table spoons (finely chopped)
Salt - 3/4 - 1 tea spoon (adjust to taste)
Mustard Oil - 1 tea spoon
You can replace the sattu by roasting besan in a pan for a few minutes on simmer until the raw smell goes off.. This should take around 3 - 5 minutes..
For making the litti - sieve the flour and add all the ingredients and mix well together. Add water and make a stiff and soft dough.. Keep this covered to rest for 30 minutes
For making the stuffing, mix all the ingredients well and set aside
After 30 minutes of resting, divide the dough into 8 parts and make them into rounds
Make a thick circle disc and place a table spoon of stuffing inside and wrap the dough and seal the edges well
Keep them on a greased baking tray with the sealed side down
Preheat the oven to 200 degrees C and place the baking sheet and bake for 30 - 40 minutes. Mine took 40 minutes.. Flip the litti every ten minutes
Once it is golden brown, remove from the oven and dip in ghee and arrange on the serving plate
For making the chokha. Preheat the oven to 230 degrees C and bake the tomato and garlic cloves for 20 minutes and set aside to cool.. Once it is cool, peel the skin and mash the tomatoes and garlic and set aside.
Boil, peel and mash the potatoes. To the potatoes, add the tomatoes-garlic mash and all the ingredients and transfer to the serving bowl..
To serve, dip the litti in ghee and serve it with chokha..
