Spicy Pasta - Indian Style

My daughter loves pasta.. Guess a lot of kids do.. Hey the truth is I also love it.. lol:).. So I surely try my best to make it healthy. I have used Whole Wheat Pasta here.. Reason - that is what I prefer.. Even my daughter likes the nutty taste of the whole wheat pasta and actually does not like the regular pasta.. This is my daughter’s favorite lunch or dinner and she is super excited when I make it.. Pasta is an Italian dish which I have customized with Indian spices and taste according to our preference and liking..

Ingredients

Whole Wheat Pasta - 1 packet
Tomato - 3 (chopped)
Cashew - 10
Fennel Seeds - 1 tea spoon
Cumin Seeds - 1/2 tea spoon
Salt - 1 tea spoon + 1/2 tea spoon
Onions - 1 cup (chopped)
Green Chili - 1 (optional)
Cloves - 5
Cinnamon - 1 inch piece
Bay Leaf - 1
Kalonji - 1/2 tea spoon
Tomato Paste - 1 table spoon
Garlic - 10 cloves (minced)
Coriander Leaves - 2 table spoons
Butter - 1 table spoon
Olive Oil - 2 table spoon
Italian Seasoning - 1 tea spoon
Cheese - as per choice
Milk Powder - 2 table spoons
Olives - 10 (sliced)
Sun Dried Tomato - 10 (chopped)

Method

Cook the pasta as per the package instructions with 1 tea spoon of salt. It normally takes about 10 minutes of boiling.
Do the sauce as the pasta is cooking as the pasta will dry out once cooked and needs to be used as soon as possible
Heat a pan and add butter and add the fennel seeds and cumin seeds
Add the cinnamon, cloves and bay leaf along with kalonji.
After 30 seconds, add the garlic and saute for 30 more seconds
Add the green chili and the onions and 1/2 tea spoon salt and saute until the onions are clear
Add tomato paste and cook for a minute
Add the tomatoes and cook for a minute more
Add the olives, sun dried tomato, milk powder, little cheese and finally the seasoning
Now the sauce is ready
Once the pasta is cooked, strain it and put it into the sauce and mix well along with olive oil
Serve with black pepper powder and more cheese or as is!!!

  9. Wow, you have indianized it with all those spices that it doesn't sound Italian anymore. However I do like all the spices you have used. Spicy pasta sounds like my kind of food. Yum. Yum!
