Palak Paneer is a very popular North Indian dish. It tastes best when served hot with rice, Naan or Roti. It is very attractive from its great and rich green color. Today I have made 2 variations to my regular recipe - I have used tofu instead of paneer and have also not included onion and garlic.
Ingredients
Spinach – 2 cups
Tomato (diced) – ½ cup
Oil – 3 table spoon
Cloves – 6
Ginger (minced) – ½ tea spoon
Green Chili (minced) – 2
Cumin Seeds – ½ tea spoon
Salt – 1 ½ tea spoon
Cream – ¼ cup
Garam Masala – 1 tea spoon
Water – to boil the spinach
Bay Leaves – 2
Cinnamon Stick – 1 inch piece
Firm Tofu (cubed) – 1 cup
Coriander Leaves (chopped fine) – 3 table spoon
Method
Cut the tofu into cubes and lightly sauté it in tawa until golden. Set aside.
Cook the spinach in microwave for 6 minutes and blend it to a smooth puree and set aside
Heat oil in a pan and add cloves, cinnamon stick, bay leaves and cardamom and after 10 seconds, add ginger and green chili.
Sauté for 30 seconds and add the tomatoes and salt and cook until done
Add the puree spinach, Tofu and the garam masala
Once it comes to a boil, add the cream and cook for 3 more minutes
Remove from heat, add coriander leaves and serve.
