Pasta is an Italian dish made with a combination of cooked pasta and a sauce. There are many types of pasta like Penne, Fettuccine, Farfalle, Spaghetti etc. Pesto is a type of a paste made with specific ingredients.. Most of the time it is uncooked.. So it has bursting flavor of fresh ingredients.. This is not a traditional pesto, but a pesto made with the ingredients I had on hand and it was flavorful and everybody in my house loved it!!! Ingredients
Basil Leaves - 1 cup (packed)
Lemon Grass - 50 grams
Garlic - 8 cloves
Salt - little less than 1/2 tea spoon
Gouda Cheese - 75 grams
Italian Seasoning - 1/2 tea spoon
Olive - 1/4 cup
Pine Nuts - 1/4 cup
Almond - 2 table spoons
To serve
Pasta - cooked
Gouda Cheese
Cracked Black Pepper
Pasta cooked hot water - 1/4 cup
Basil Leaves - 1 cup (packed)
Lemon Grass - 50 grams
Garlic - 8 cloves

Olive - 1/4 cup
Pine Nuts - 1/4 cup
Almond - 2 table spoons
To serve
Pasta - cooked
Gouda Cheese
Cracked Black Pepper
Pasta cooked hot water - 1/4 cup
Method
To a blender, add basil, lemon grass, garlic, cheese, roasted pine nuts and roasted almonds. Pulse this a few times to make it coarse
Add Olive oil, salt and allow it to run until it becomes a paste. Now the Lemon grass Basil Pine Pesto is ready. Keep it open to retain the color.
Cook pasta as per package instructions and strain the excess water (but keeping 1/4 cup for use)
In the serving bowl, mix together the pesto and the hot water well until it merges well
Add the cooked and drained pasta to the sauce and mix well until it is coated
Garnish with grated cheese and black pepper and serve hot!!
