Bajji is a famous snack in South India. It tastes best when served hot. Bajji can be done with a variety of vegetables like Potato, Carrot, Brinjal (Eggplant), Snake gourd, plantain, bell pepper, onion, bottle gourd, chili etc. Famous ones are potato, chili, plantain and onion. Adjust salt and chili powder to taste.
Ingredients
Besan / Gram Flour / Kadalai Maavu – 1 cup
Rice Flour – ¼ cup
Chili Powder – ¼ tea spoon
Salt – 1 tea spoon
Asafetida – A pinch
Coriander Powder – ¼ tea spoon (optional)
Oil – to fry
Potato - sliced into thin slices
Baking Powder – A pinch – Very little
Water – to make batter
Method
Mix rice flour and kadalai maavu and add salt, chili powder, coriander powder and finally add baking soda
Now add water little by little to bring to dosa batter consistency
Heat oil in a pan keeping the flame on medium
Dip the potato in the batter and drop it in the hot oil
Turn both sides to ensure that both sides are fried
Once golden brown, remove from oil and put it on a paper towel to drain excess oil
Serve hot with tomato chutney or mint chutney or ketchup
