From Wiki – “Diabetes mellitus, or simply diabetes, is a group of metabolic diseases in which a person has high blood sugar, either because the pancreas does not produce enough insulin, or because cells do not respond to the insulin that is produced.[2] This high blood sugar produces the classical symptoms of polyuria (frequent urination), polydipsia (increased thirst) and polyphagia (increased hunger).”. Samosa (சமோசா)

Samosa is a very famous Indian snack which has an outer layer with stuffing and then deep fried. It makes a great afternoon snack and goes well with Tea. The stuffing of the samosa can be adjusted accordingly to taste and preference. You can serve these as is or with spicy chutney!! SO yummy!!

Eggless Oats Chocolate Biscottis:

For this month's HBC, the choice was to do Biscotti.. I have baked Biscotti twice before and loved it both times.Eggless Pistachio Tutti Frutti and Orange Biscotti and Pistachio Cardamom Biscotti are the other two... This one is little different with chocolate in it and has a great deep dark chocolate flavor.. A great thing about biscotti is its crunch and its shelf life.. Love this with coffee or juice as an evening snack.. So yummy!!

Veppam Poo Sadam / Neem Flower Rice

Veppam Poo (Neem Flower) is a very medicinal ingredients and has a lot of advantages.. If you have a neem tree in the house, then fresh flowers are easy, but otherwise you could get dried neem flowers from many grocery shops or Naattu Marundhu Kadai (Natural medicine shops / Health Food stores). This rice is very flavorful, soothing and comforting...

Thengai Podi (தேங்காய் போடி)–Coconut Powder

Coconut Powder / Thengai Podi is a powder made with coconut, lentils and red chili. It is a quickie that can be done in less than 5 minutes with all the Ingredients available in most pantries. It can be made in advance and stored in an airtight container for a month. Mix this with hot rice and a dollop of ghee or coconut oil and it is a great quick dinner. This goes for this month's Vegan Thursdays
