For this week BM, I am doing low cal breakfast and I instantly thought of Aval upuma. Upuma is such a homey and comfort food and always reminds me home.. Aval (Poha) upuma is a quick and easy dish that can be made in less than 15 minutes. It tastes best when served hot. Cut the potatoes very small to make it cute and also blend with the aval. You can also garnish with some freshly grated coconut if desired.
Ingredients
Aval / Poha – 1 ½ cups
Salt – 1 ¼ tea spoons
Green Chili – 2
Onion (minced) – ½ cup
Potato (chopped very small) – ¼ cup
Oil – 2 table spoon
Cumin Seeds – ½ tea spoon
Mustard Seeds – ½ tea spoon
Curry Leaves – 6
Asafetida – 1/8 tea spoon
Turmeric Powder – ½ tea spoon + a pinch
Red Chili – 1
Cashew – 2 table spoon
Coriander Leaves – 1 table spoon
Method
Boil potatoes in microwave for 6 minutes with salt and a pinch of turmeric
Once the potatoes are done, wash them through a strainer to remove stickiness and set aside.
Wash the aval thoroughly and drain all the water and set aside.
Heat oil in a pan and add mustard seeds and once it crackles, add cumin seeds
Add cashew and sauté until cashew is golden from all sides
Add red chili, green chili, curry leaves and sauté for 30 seconds
Add onions and sauté for a minute
Add turmeric, salt and asafetida and cook for around 3 minutes
Now add the potatoes and cook for a minute
Now add the aval and mix all together and stir for 2 more minutes
Remove from heat and garnish with coriander and the aval upuma is ready to be served!!
