For third day of the Blogging marathon - Kid's delight, I am including a Chocolate Oats Bar which is a quick and easy snack which also make a great nutritional food on the go. This is done in microwave and can be done in less than 30 minutes, but needs time to set. I got this recipe from here and this is a sure keeper and a big hit with both kids and adults..
Ingredients
Oats (quick cooking) – 2 cups
Flax Seed Powder - 1 table spoon
Warm Water – 3 table spoons + 2 table spoons (if needed)
Brown Sugar – 1/2 cup
Molasses – 2 table spoons (increase brown sugar if molasses is not there)
Salt – ¼ tea spoon
Butter - 4 table spoon (melted) + little more for greasing
Oil – 2 table spoons
Vanilla Extract - 1/2 tea spoon
Semi Sweet Chocolate Chips – 1/2 cup
Method
Roast the oats in the microwave for 2 minutes (stirring twice in between) and set aside.
Grease a 8 inch round glass dish with a little butter and keep aside. Make the sleeved parchment paper to enable easy removing from the glass dish.
Mix together flax seed powder and warm water and set aside for a few minutes. Beat them vigorously with a whisk until it becomes gooey and set aside.
In a large bowl mix together sugar and oatmeal.Whisk flax seed meal with water together for a few seconds until it turns gelatinous. Keep this aside.
Melt butter and pour over the oatmeal + sugar mixture and mix well. Pour the flax seed mixture over it as well and mix again. Add additional 2 table spoon water, vanilla extract and mix once more.
Spoon this mixture onto the pre greased dish and press down with the back of the spoon.
Microwave on high for 4 – 5 minutes.
Remove and spread the chocolate morsels on top of the oatmeal mixture and on 30 percent power cook for 2 to 4 minutes or until the morsels turn shiny
Spread the morsels with a knife and allow this mixture to cool a little. Place the dish in freezer for 15 to 20 minutes. Or if you have time, then allow it to rest on the counter.
Cut into rectangle bars or small squares and place in an air tight container. Use within a few days for best freshness.
For Vegan version - substitute butter with oil.
