How about something which is very healthy and yummy delicious? A muffin which can be eaten guilt free is not something easily available everywhere, but it can be available in your houses with this great recipe. I got this recipe from here and thoroughly enjoyed it. I have used honey as the sweetener here, but for vegan version, please use agave nectar. You will need little more than 1/2 cup of agave nectar as it is less sweeter than honey..
Ingredients
Whole Wheat Flour - 1 cup
Stoneground Cornmeal - 1 cup
Salt - 3/4 tea spoon
Baking Soda - 1 tea spoon
Unsweetened Applesauce - 1 cup (adjust honey if using sweetened applesauce)
Honey - 1/2 cup (for vegan, use agave nectar)
Fruit Juice / Milk - 1/2 cup
Water - 1/2 cup
Canola Oil - 1/4 cup
Method
Preheat the oven to 180 degrees C. Grease a 12 cup muffin pan and line it with liners.
In a bowl, sieve and mix together whole wheat flour, salt and baking soda.
In another bowl, whisk together applesauce, fruit juice or milk, water, oil and honey
Add the wet ingredients to the dry ingredients and stir to combine. This batter is quite thin, but that is secret behind the moist muffins..
Fill the batter into the muffin cup to about 3/4 full
Bake in the preheated oven for around 22-25 minutes until a toothpick inserted in the center coms out clean
Cool in the pan for around 10 minutes
Remove from the cups and cool on a wire rack completely
Serve this warm or at room temperature for breakfast or for snack
