Cream less tomato soup is a tomato soup with no cream or butter added. This soup is still rich and creamy in texture. It has a lot of tomato flavor and its beautiful color is a sure hit. Top it off with some croutons and serve hot.
Ingredients
Tomato – 8
Onion (minced) – 1 cup
Garlic – 6 cloves
Oil – 3 table spoons
Milk – 1 cup
Water / Tomato Juice – 2 cups
Red Chili Powder – ½ tea spoon
Turmeric Powder – ¼ tea spoon
Salt – 1 tea spoon
Bread – 3 slices
Cloves – 2
Cinnamon Stick – 1 inch
Bay Leaves – 1
Brown Sugar – 1 table spoon
Tomato paste – 1 table spoon
Method
Preheat the oven to 400 degrees F
Cut the tomatoes in half and remove the seeds and line them in a baking sheet
Top the tomatoes with brown sugar and roast them in the oven for 25 minutes
Heat oil in a pan and add cloves, cinnamon, bay leaves, garlic and after 15 seconds, add onions
Add salt and tomato paste
Sauté until onions are clear and done
Add the tomato juice and after 3 minutes, add the roasted tomatoes
Add turmeric powder, chili powder and cook this mixture for another 2 minutes
Add the bread pieces and cook for about 2 more minutes until the bread is soft and tender
Remove from heat and remove the bay leaves and cinnamon stick
Blend this with a blender to a smooth puree
Add puree to a pan and add milk and cook until simmer
Remove from heat and top with croutons and serve!!
