Today’s recipe will be my 200th post on the blog and am sharing a Vanilla Tutty frutti cake. Thanks to all my readers and followers who have helped me travel so far and hope to receive the same or better support from you all. Here is a delicious Fruit cake, sponge cake or vanilla cake for the celebration… Sponge cake is a very basic cake recipe that can be used just by itself as a cake or be converted to a variety of cakes like shape cakes, layered cakes etc. I used this in Tiramisu in the place of lady fingers or savoriadi cookies as they have egg in them. This recipe is from here with some changes. You will get 1 13x9 inch cake or 2 9 inch round cakes.
Ingredients RequiredAll Purpose Flour - 2 ½ cups
Baking powder – 2 teaspoons
Baking soda – 1 tea spoon
Sweetened condensed milk – 1 can (14 oz.)
Orange juice – 1 ½ cups
Salt – ¼ tea spoon
Vanilla extract – 2 tea spoons
Melted butter – 1 cup
Tutti Frutti – ¼ cup
Sugar – 1/4 cup
Method
Preheat oven to 180 degrees C
Grease a 9x13 inch pan.
In a mixing bowl, beat together butter, sugar and condensed milk until it forms an uniform mixture. Add orange juice, vanilla extract and tutti frutti. Set aside
Sift together the flour, salt, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the wet ingredients.
Mix well and pour into prepared pan.
Bake in the preheated oven for 30 minutes (turn the pan half way through for even cooking), or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
