Moong Dal Fry is an easy snack that tastes best when served in room temperature. It can be stored in an airtight container for a week. This is one of the recipes that I made on a guess and it was wonderful. Adjust salt and chili powder to taste. Also ensure that excess oil is removed for it to taste good.
Ingredients
Paasi Parupu / Moong Dal – 1 cup
Chili Powder – ½ tea spoon
Salt – Less than ½ tea spoon
Asafetida – A pinch
Curry Leaves – 2
Oil – 2 cups + 1/2 tea spoon
Method
Soak the dal for 8 hours
Strain the water and then spread the moong dal on a cloth (veshti or cotton towel) for 20 minutes
Heat 2 cups of oil in a pan
Add the dal to the oil and fry them till golden color
Remove the dal from oil (Use a tea filter for this purpose)
Put the fried dal on a paper towel to remove the excess oil
Add salt, asafetida and chili powder to the fried dal
Add 1/2 tea spoon oil and fry the curry leaves
Add the fried curry leaves to the dal mixture
Now the Moong dal fry is ready to be served!

It reminds me of school days! I used to have a pack of 'Samrat' mung dal every now n then :P Will make this one at home now...
