Accompaniments are so important part of the menu.. So much that it can transform a simple and boring breakfast to a tasty and yummy one.. This is so true with this very delicious coconut chutney which is a quick and easy recipe that is served as a side with many South Indian tiffin or snack items. It is a good side for idli, dosa, bonda, vadai etc. This is my dish for this month's Vegan Thursdays
Ingredients
Grated Coconut – ½ cup
Salt – 1/2 tea spoon
Pottu Kadalai / Roasted Chick Peas – 1 cup
Curry leaves – 10
Mustard Seeds – ¼ tea spoon
Cumin Seeds – ½ tea spoon
Asafetida – ¼ tea spoon
Green chili – 4
Oil (preferably Sesame oil) – ½ tea spoon
Water – ¾ cup
MethodGrind the coconut, roasted chick peas, green chili, salt and asafetida together – without adding water first
Add water little by little and transfer to a serving bowl
Heat oil in a small pan, add mustard seeds and cumin seeds, once they crackle, add ulutham parupu and red chili
Add curry leaves and fry well
Once the parupu turns golden brown, remove from heat and garnish over the chutney
Chutney is now ready to be served
