Spinach RotI / Bhaji Roti is a very healthy version of the very healthy roti… Too many good things in one and tastes also awesome… You could use this for frankies or as a tortillas or just plain roti and enjoy with your favorite side dish.. The green color looks so inviting and eye appealing.. For this month’s Potluck, I got the option to try any recipe from Jagruti’s blog and this was my choice.
IngredientsWhole Wheat Flour – 1½ cups
Salt – ½ tea spoon
Turmeric – 1/8 tea spoon
Spinach – 3 cups
Water – ¼ cup
Cumin Powder – ½ tea spoon
Oil – 3 table spoons
Method Cook spinach in microwave with water for 6 minutes
Allow the spinach to cool and blend to a smooth puree
Add oil, turmeric, salt and cumin powder to the spinach puree and mix well
Now add the whole wheat flour and make it to a smooth dough
Coat with few drops of the oil on the dough to smooth it
Roll it to a small roti similar to regular roti and cook the roti on both sides until well done. Use the suka roti maker if desired
Keep them in an insulated container until ready to be served. Enjoy them warm.
