Almond Truffles

Here is another easy recipe which takes resting time, but preparation time is so less and also so simple.. You need only 4 ingredients and this will be a great crowd pleaser.. You could use any nuts in place of almonds, but I love the combo of almonds and chocolate… Instead of adding the almonds to boiling water, you could also soak the almonds overnight and then peel them. There are so many versions of this on the net and this is my way..

Ingredients

Semi Sweet Chocolate - 250 grams
Whipping Cream - 125 ml (1/2 cup)
Almond Essence - A few drops (preferably oil based essence)
Almonds - 1/2 cup (adjust as needed)

Method

Soak the almonds in boiling water for 3 minutes. Peel of the skin and chop them and set aside
Lightly toast the almonds until they change color a bit. Set this aside on a plate
Chop chocolate into small pieces and keep it in a bowl
Heat the cream until it is frothy on the sides and pour the cream over the chocolate and keep it covered. Do not stir now.
After about 10 minutes, stir the cream and chocolate until it becomes glossy and all the chocolate is melted
Cover it with a plastic wrap and keep the bowl in the fridge for 2 hours
After 2 hours, with the help of a tea spoon, scoop out the chocolate and make small balls with it. Use a gloves if you have warm hands like me or your chocolate will melt and become sticky
Roll the chocolates on the toasted almonds and arrange it on the parchment paper lined baking tray
Refrigerate for 30 minutes and serve!!
