Masala Peanuts (Protein Packed Power)

Looking for yet another healthy snack to keep munching??? Here comes a protein packed power food. We get similar ones in shops but those are fried and this one is baked. I got the recipe from here and loved it. Try this guilt free snack. It is very easy and tastes amazing..

Ingredients
Raw Peanuts – 1 ½ cups
Kadalai Maavu / Besan – 1 ½ cups
Red Chili Powder – 1 ½ tea spoons
Salt – ½ tea spoon
Rice Flour – 1 ½ table spoons
Oil – 2 tea spoons
Cumin Seeds – 1 tea spoon
Turmeric Powder – ¼ tea spoon
Water – 1/3 – ½ cup
Olive Oil - 2 tea spoons

MethodPreheat oven to 400F at baking mode. Make a mix with besan, rice flour, cumin, chilly powder, salt and turmeric.
Take half of the above mixture and pour about 6 table spoons water to make a paste of bajji maavu consistency. Add 2 or 3 more table spoons of water if needed. It took me 10 table spoons of water to get to the consistency
Pour the paste over the peanuts and mix with a spoon so that all peanuts are coated with the paste.
To the other half of the dry mixture add the olive oil. This is totally optional and can be skipped making it totally oil free. I have tried it both ways and found that the oil made it much more crispier.
Add this remaining dry mixture to the peanuts which are coated with the paste. Mix well using a strong spoon as it clumps up a lot and we need to put some pressure to mix it. It is ok if there is a little bit of flour here and there but if you feel there is too much then just barely wet your hands with water and mix.
Place the peanuts in a baking sheet lined with aluminum foil to make cleanup easier. It is going to be clumpy and in clusters and that is fine.
Bake for 12 minutes after which it is time to break the clumps. We want individual peanuts to munch on and not clusters right.Bring the peanuts out and leave it on counter for 2 minutes and use the hands to break the clusters
while they are still hot and nope I did not get burnt. If you feel hot to handle to peanuts, use a paper towel as a glove.
Reduce the oven to 375 degrees F and get it back to the oven for another 10 minutes. Garam garam masala peanuts ready. It will become crispier as it cools.
