Cookies are fun as they are quick to make, have a longer shelf life and they look so pretty. They are also a great food on the go. While some cookies are very sinful in calories, this one is little on the other side.. I got this recipe from here and this is surely a keeper. Kids delight recipes are fun to make and imagine them to sweets or desserts or cookies that they love!!! I am including this for the Kids delight - desserts for this month's BM.
Ingredients
All Purpose Flour - 1 cup
Unsalted Butter (at room temperature) - 1/4 cup + 2 table spoons
Powdered Sugar - 1/2 cup
Tutti Frutti - 1/3 cup
Vanilla - 1/2 tea spoon
Milk - 1 to 2 table spoon
Vanilla - 1/2 tea spoon
Method
Beat butter and sugar well until it is light and fluffy.. Does not take much time, so you can do it with a whisk or a fork
Add Vanilla, flour and tutti frutti and mix well
Add milk very slowly to form a sticky dough
Roll the dough on a parchment paper / butter paper to a cylinder shape and wrap it well and close the sides and freeze it for around 45 minutes or until it is very firm
Take out the cylinder and cut them into thicker slices with a sharp serrated knife. If you knife is not sharp, then the edges will crack and will not be clean.
If the edges are not clean, then press them to shape on the cracks to seal with your fingers..
Preheat the oven to 160 degrees C
Lay parchment paper on a baking tray
Arrange the cookie slices on the baking tray and bake it in the preheated oven for 10 - 15 minutes or until slightly golden at the edges
Transfer to a cooling rack and allow it to cool completely before storing them in an airtight container
Notes
Add milk as needed to form a sticky dough
If the batch of cookies are waiting to go into the oven, please place them in the fridge
Carefully watch the cookies from 10 minutes as they tend to burn very easily
Cooking time will depend on the oven and the cookie thickness
Cookies will be little soft when out of the oven, but will become crispier as they cool
I have made round shaped ones, you can roll them into a desired thickness and cut into different shapes with a cookie cutter

ReplyDeletei haven't had a fruit cookie like yours. most of the ones i have had were fruit filled in the form of jam. so, this is a nice change plus i like the color of those fruits... very pretty!
