I love the cookies that melt in your mouth.. This is a very easy and quick cookie recipe and you cannot stop with one!! This recipe will give around 20 small to medium sized cookies. I got this recipe from here and we love it… I have included all Indian flavors like cardamom and nutmeg. You could also use vanilla extract in its place.
Ingredients
All Purpose Flour – 140 grams
Rice Flour – 30 grams
Pistachio – 50 grams
Butter (softened) – 125 grams
Salt – A pinch
Powdered Sugar – 60 grams
Cardamom – 4
Nutmeg Powder – 1/8 tea spoon (optional)
Method
Cream the butter and sugar in a medium sized bowl until pale and fluffy.
Sift in the flour, salt, nutmeg powder and cardamom powder together into butter mixture.
Add the pistachios in a blender and pulse it for a few seconds and add it to the ingredients and form a soft dough
Cover with plastic wrap and refrigerate for 30 minutes.
Remove the dough from the refrigerator, shape two tea spoons of dough into balls, flatten into 3 cm rounds (Grease the palm with butter if needed) and place it in a baking tray lined with parchment paper. Give gap as this will expand a little
Preheat the oven to 300 degrees on convection mode (regular mode is 320 degrees F). Bake it for 15-22 minutes until the sides start to turn golden. Mine took 21 minutes.
Allow to cool on wire rack and enjoy the melt-in-your-mouth cookies

ReplyDeleteFor the yule log cake,Sowmya you can make a simple eggless chocolate cake,instead of rolling you can make layers with whipped cream,chocolate ganache or fruits.Since you dont eat eggs, roll will be quite difficult without eggs.
i have tried the same recipe but with almonds n cashews...love this buttery delicious cookies...lovely combo n looks very attractive!
