Ginger candy is a very interesting tasting sweet which has a lot of flavor and is pretty easy to make. It is a sweet-hot treat. It can also be used in many Chinese or Thai dishes that call for sweet ginger. Ginger candy and ginger drink are made together. This candy is very helpful and a tasty medicine to cure nausea, vomiting and morning sickness. We used this couple of times when we were on the cruise with rough sea and was relieved of the sea sickness in a few minutes. Ginger Candy can be stored in an airtight container for at least a month..
Ingredients
Ginger – 1 cup (thinly sliced one inch or bigger round)
Sugar – 1 cup
Water – 1 cup
Salt – A pinch
Method
Boil water, ¾ cup sugar and ginger together.
Add the salt
Once it comes to a simmer, reduce the flame to medium low and cook for around 25 minutes until the syrup is thick
When drawn on a plate, it should draw a line
Allow this to cool
Once cool, crush the ginger pieces via a strainer to extract all the juice
Put the ginger pieces into sugar ¼ cup sugar and transfer the individual pieces to a baking sheet lined with Parchment paper
Bake it on the lowest possible temperature like 180 or 200 for 6 hours
Enjoy them warm or room temperature…
