Coconut cookie is an interesting, quick and easy cookie to make. It can also be called as biscuit. If you do not have fine grated coconut, then pulse the coconut in the mixie for 10 one second pulses. I got this recipe from here. Basic quantity is same quantity of sugar, coconut and butter and twice the quantity of flour.
Ingredients
Finely Grated coconut – 50 grams
Maida or All-purpose Flour – 100 grams
Butter – 50 grams
Powdered Sugar – 50 grams
Vanilla Essence – ½ tea spoon
Baking Powder – ¼ tea spoon
Milk – 1 table spoon
Method
Preheat the oven to 350 degrees F (Convection mode is 325 degrees F)
Beat butter, sugar and vanilla until creamy
Mix flour, baking powder and coconut well to ensure that they are well incorporated
Now add the dry ingredients to the butter mixture and make a dough.
Add milk to form the dough, but add it a tea spoon at a time
On a surface, dust some flour and add the dough to the surface and roll it to a cylinder shape of desired thickness
Cut the cylinder into equal pieces and place them on a baking tray lined with parchment paper
Dip fork in the flour and press on the cookies lightly to make the indentations.
Bake in the oven for 15 minutes and decrease the heat to 300 degrees F and bake for another 5 minutes
Remove from oven and cool them on a cooling rack.
