Puff is leavened bread with stuffing. It is a great snack, a perfect party dish and a great food on the go. It tastes best when served hot and can be accompanied with tomato Ketchup. The stuffing is really a personal choice and can be adjusted according to taste, preference and availability. Making puffs are so easy if you have the puff pastry sheets readily available. When I was in US, I used to get it from the freezer section in the grocery stores. You will get 9 Puffs from the below recipe. I am starting the Month long marathon with this great Party food.
Ingredients
Puff Pastry Sheets – ½ box
Potato – 2
Peas – 1 cup
Onion – 1
Cabbage (shredded) – 1 cup
Carrot (shredded) – 1 cup
Bay Leaves - 1
Cloves - 4
Cardamom - 2
Cinnamon Sticks – 1 inch
Star Anise– 1/2
Fennel Seeds (Sombu) – ½ tea spoon
Shahi Jeera / Black Cumin Seeds – ½ tea spoon
Cumin Seeds – ½ tea spoon
Coriander Leaves – 1 table spoon
Oil – 2 tea spoons
Turmeric Powder – ½ tea spoon
Salt – 1 tea spoon
Garam Masala – ½ tea spoon
Coriander Powder – ½ tea spoon
Cumin Powder – ½ tea spoon
Method
Take the puff pastry sheet from the freezer and put in on a plate to thaw at room temperature. It will take 40 minutes to thaw.
Open the fold and make it as one sheet. Now use a knife and cut the already marked area for cutting
This will give 3 sheets and then cut the sheet into 3 squares. So we will have 18 Squares which is 9 squares per sheet.
Boil the potatoes and mash them
Heat the oil in a pan and add bay leaves, cloves, star anise, fennel seeds, cumin seeds and shahi jeera and sauté
Add onions and fry till the onions are clear and add little salt
Add coriander powder and cumin powder
Now add shredded carrot and cabbage and cook until the veg are fully cooked
Add the potato and peas and mix them well
Add garam masala and salt
Finally add coriander leaves
Remove from heat and allow it to cool
Pre heat the oven to 400 degrees F
Once the masala is cool, make small balls of it.
Keep each ball in the center of the square and press it in the corners to seal them
Take a fork and pull it from the side for the design
Keep these on the baking tray
Keep it in the oven for 15 minutes
Remove from the oven and transfer to a cooling tray
After 5 minutes, the puff is ready to be served!

ReplyDeleteI wish puff pastry was available in India. I just love puffs. As a kid I would coax my mother to buy me one from the bakery each time we went to the market. It wasn't an easy job getting ger to buy it, but it was so totally worth it. Your puffs look very good
