Groundnut Sundal / Kadalai Sundal

Sundal is a very popular evening snack which is quick and easy. It can be prepared in less than 30 minutes from start to finish. This is a variety of Sundal. This is also a festive snack prepared during Navarathri festival.

Ingredients
Groundnut – 2 cups
Salt – 1 tea spoon
Water – to boil
Coconut Grated – 1/3 cup
Curry Leaves – 5 chopped
Oil – ½ tea spoon
Mustard Seeds – ½ tea spoon
Red Chili – 2 or 3
Cumin Seeds – ¼ tea spoon
Asafetida – A pinch
Method
Boil the Groundnut with adding salt in cooker for 3-5 whistles depending on the cooker. Same number of whistles as rice
Once the cooker open, remove the excess water from the groundnut and spread it on a plate
Heat oil in a pan and add mustard seeds
Once the mustard seeds start to crack, add cumin seeds, curry leaves and red chili.
After 15 seconds, add the groundnut, asafetida and mix well
Once mixed well, add coconut and remove from heat
Transfer to the serving bowl and now the sundal is ready to be served.
