Bagel

Today's bake is a very famous type of bread called a Bagel. I love these with cream cheese.  Bagel is a traditional bread originated from Poland which is shaped by hand into a ring, poached and then baked, The toppings are a personal choice. Common toppings are sesame seeds, poppy seeds and rolled oats. I got this recipe from here. How does a good bagel taste – it should have a crust exterior, chewy interior and will have a light pull.

Ingredients

Bread Flour - 2 cups
Sugar - 1 table spoon
Olive Oil - 1 table spoon
Salt - 1/2 tea spoon
Instant Yeast - 1 tea spoon
Warm Water - 1/2 cup + 2 table spoons

To Poach the bagels

Sugar - 4 table spoons
Water - 2 cups

For topping / dressing

Poppy Seeds - black and white
Sesame Seeds
Rolled Oats

Method

To the mixer bowl, add the warm water, sugar and yeast and mix well
Keep it aside covered for 5 - 10 minutes until it is frothy
To the mixing bowl, add the flour, salt and mix well
Knead for 5 minutes
Add oil and continue kneading for about 10 minutes till the mixture is smooth and elastic
Grease a bowl and place the dough in it and coat with oil and keep it covered with a plastic wrap
Set aside for an hour until it is double
After the dough has risen, transfer to the counter and divide into 6 portions
Roll each portion into a smooth ball.
Gently press your thumps through the centre of each ball and create a big hole. Watching the video can help.
Repeat with rest of the balls and place them on a greased tray
Cover it again with plastic and allow it to double for another hour

At the end of the rise time, place a wide pan on medium high and add the sugar to poach the bagels
Allow the sugar to nicely caramelize to a nice golden sticky syrup
Reduce the heat to the least possible and slowly add the water. Take lot of caution here as it will splatter
Preheat the oven to 200 degrees C
Slowly place each bagel into the boiling caramel water and allow them to boil on each side for a minute
Dip the poached bagels on the topping of choice (sesame seeds, poppy seeds or oats). You can also dip in more than one topping.
Transfer the bagels to a pre lined and greased tray and place them in the oven
Bake for 15 minutes or until golden borwn
Allow them to cool for 3 - 5 minutes
Enjoy with a generous amount of cream cheese!!

  3. tempting bagels. I had my first ever bagel at the Heathrow airport Terminal 3 and since then have loved them. During my last visit to Montreal made my son buys loads of different topped bagels. He thought I had gone mad!
