I love quick breads for their simplicity and versatility.. I got this recipe from here.. This recipe uses no processed ingredients and I love such ones which are healthy, quick, easy and delicious!!!
Ingredients
Whole Wheat Flour - 1 cup
Oats Flour - 1 cup
Dried Fruits of choice - 100 grams
Natural Cane Sugar / Palm Sugar - 3/4 cup
Baking Powder - 1 tea spoon
Baking Soda - 1/2 tea spoon
Salt - 1/4 tea spoon
Butter / Oil - 1/4 cup
Curd - 1 cup
Vanilla Essence - 2 tea spoons
Lemon Zest - from 1 lemon
Lemon Juice - 3 table spoons
White Poppy Seeds - 1 table spoons
Hot Water - 2 table spoons
Method
Preheat the oven to 180 degrees C
Grease a loaf pan and set aside
In hot water, soak the poppy seeds
Sieve together whole wheat flour, oat flour, baking powder, baking soda and salt
Grind poppy seed to a paste.
In another bowl, beat together sugar and butter (or oil) until fluffy
Add curd, lemon zest, poppy seed paste, lemon juice and vanilla essence
Add the dried fruits and mix well
Make a well in the center of dry ingredients and alowly add the liquid ingredients and mix well.
Do not over beat it ass it may become rubbery
Pour this into the prepared loaf pan and bake it in the preheated oven for about 45 - 50 minutes
Reduce the temperature to 165 degrees c and bake for another 5 minutes
Bake until a toothpick inserted in the center comes out clean
Place it on a cooling rack to cool
Remove from pan to the cooling rack and allow it to cool completely
Slice and enjoy!!!
