Quick Breads - as their name says there are quickly made breads. They are so versatile and come in many tastes from sweet, savory, spicy etc. They can be enjoyed for tiffin, breakfast, makes perfect for travel and lunchbox. I got this recipe from here. This recipe has a unique taste, aroma and flavor from molasses.
Ingredients
Whole Wheat Pastry Flour - 1 cup
Whole Wheat Flour - 3/4 cup
Salt - 1/2 tea spoon
Baking Powder - 2 1/2 tea spoon
Baking Soda - 1/2 tea spoon
Wheat Germ - 3/4 cup + 1 table spoon
Honey - 2 table spoon
Molasses - 2 table spoon
Vegetable Oil / Canola Oil - 1/2 cup
Buttermilk - 1 1/2 cups
Method
Grease a loaf pan well and set aside
Preheat the oven to 180 degrees C
Beat together honey, molasses and oil well
Add the buttermilk and beat well
In another bowl, sieve together both flours, salt, baking powder and soda
Add the wheat germ
Make a well in the dry ingredients and pour the wet ingredients
Gently fold and mix until there are no lumps. Take care not to over mix
Pour the batter on to the prepared loan pan. Sprinkle a table spoon of the wheat germ over it
Gently tap to remove the air bubbles
Bake it in the preheated oven for about an hour or until a toothpick comes out clean
Cool it completely before removing from the pan
Cut into slices and enjoy!!
